Doajen Prokupac wine is produced using a special strain of native yeast, Pichia Cluyveri, isolated from grapes grown in Serbia. Beyond the unique character imparted by this exclusive yeast strain, the wine has developed its distinct qualities through aging in new French oak barriques for 12 months, followed by harmonization in special amphorae made from a unique Cocciopeste material for an additional 10 months. The wine is neither clarified nor filtered.
