Doajen Tamjanika wine is produced using the orange wine method, without the use of enological additives like sulfur dioxide. The fermentation and 7- month maceration on the skins were conducted in special amphorae made from a unique material called Cocciopeste. Afterward, the wine developed its distinctive characteristics through aging in new French oak barriques with a volume of 600 liters. The wine is neither fined nor filtered.
